Roast Pork Loin with Mango Pineapple Sauce Recipe
Ingredients: 12 Serving
For the marinade and Pork Loin:
2 cups mango puree
2 cups pineapple juice
½ cup liquid seasoning
½ cup chopped garlic
1 teaspoon coarsely ground black pepper
2 – 2 ½ kilos whole pork loin, trussed
Salt to taste
¼ cup cooking oil
For the Sauce:
2 tablespoons butter
2 tablespoons flour
1 cup pineapple juice
1 cup mango puree
Reserved marinade
Salt and pepper to taste
1 tablespoon honey
For the Accompaniments:
2 tablespoons cooking oil
6 pineapple slices
3 mangoes, seeded and sliced
1 brick (250 ml) all purpose cream
3 tablespoons butter
½ teaspon nutmeg
2 kilos sweet potatoes, peeled, diced and boiled
Salt and pepper to taste
For the garnish(optional):
Prunes
Raisins
Garlic Chips

Procedures:
- Prepare the marinade and pork loin;
- In a bowl, combine mango puree, pineapple juice, liquid seasong, garlic and pepper. Let stand a few minutes.
- Pour marinade into a deep container. Arrange pork loin, making sure it is completely covered in marinade. Seaon with salt to tast. Let stand overnight in refrigerator.
- When ready to cook, preheat the oven to 375 degree F. Drain the pork loin and reserve the marinade for use in the sauce(see below).
- Sear the pork loin by roasting over high heat in a turbo broiler or convection over for 10 to 15 minutes. OR: heat oil in a large saute pan and brown the surface of the pork loin.
- Remove pork loin from heat and arrange in a roasting pan. Roast in the preheated oven for 1 to 1 ½ hours or until slightly pink in the center.
- Remove pork loin from oven and allow to rest 20 minutes. Meanwhile make the sauce and the accompaniments.
- In a saucepot, heat the butter. Blend in flour and cook until it becomes a sandy texture with just a hint of color(this is called a blond roux).
- Add the pineapple juice, mango puree and reserved marinade. Simmer until it reaches a sauce consistency and coats the back of spoon, about 10 to 15 munutes from the time it starts to boil.
- Season with salt and pepper. Blend in honey for shine.
- In a saute pan, heat cooking oil to high. Sear the pineapple and mango slices in hot oil. Remove from heat and set aside.
- In a saucepan, heat cream and butter, stirring unti lwell blended. Blend in nutmeg. Pour over sweet potato slices. Mash the potatoes until smooth. Season to taste with salt and pepper. Set aside.
- Slice pork loin and arrange on a serving platter. Pour mango pineapple sauce into a sauceboat.
- Arrange mashed sweet potatoes, mango and pineapple slices around pork loin. Garnish with prunes, raisins and garlic chips if desired. End.
