Grilled Grouper Sandwiches
Ingredients: Makes 6 sandwiches
6 (4 ounce) grouper fillets, at room temperature for 15 to 30 minutes.
4 tablespoons extra virgin olive oil
1 ½ teaspoons kosher salt
1 ½ teaspoons ground black pepper
1 recipe Chopotle Aioli (Recipe Follows)
6 fresh hamburger buns, split, buttered, and toasted
1 (5 ounce) package baby spinach
12 thin slices tomato
Lime Wedges
Procedures:
Ingredients: Make Approximately 1 cup
2 chipotle peppers in adobo sauce
2 choves garlic, minced
3 tablespoons fresh lime juice
2 large egg yolks
½ teaspoon kosher salt
½ cup extra light olive oil
½ cup avocado oil

Procedures:
- Spray grill rack with nonstick, nonflammable cooking spray preheat grill to 400 degree to 450 degree.
- Brush both sides of each fillet with olvie oil, and sprinkle with salt and pepper. Grill until fish is cooked through, 5 to 7 minutes per side, depending on thickness.
- Spread chipotle Aioli on each side of toasted buns. Layer spinach and tomato on bottom halves. Place fish on top of tomato, and top with remaining halves of buns. Serve with lime wedges, if desired.

- In the work bowl of a food processor, poulse peppers, garlic, lime juice, egg yolks, and salt until well mixture is thick and smooth. Add more lime juice and salt, if necessary.
- Refrigerate until serving time.
