Grilled Shrimp Roll Recipe

Grilled Shrimp Roll
Ingredients: Makes 6 to 8 serving
3 pounds medium fresh shrimp, peeled and deveined
¼ cup extra virgin olive oil
1 ½ teaspoons kosher salt, divided
1 ½ cups mayonnaise
1 cup finely chopped celery
3 tablespoons minced fresh dill
3 tablespoons fresh orange juice
1 teaspoon ground black pepper
6 to 8 bakery hot dog buns, split
3 tablespoons unsalted butter, melted

  • Spray grill rack with nonstick nonflammable cooking spray preheat grill to 400 to 450 degree. In a large bowl, combine shrimp, olive oil, and 1 teaspoon salt. Grill shrimp until opaque and cooked through, approximately 2 mintues per side. Remove from grill. Let cool. Brush inside of hot dog buns with melted butter. Place buns on grill, cut side down. Grill until toasted and hot 1 to 2 minutes.
  • Roughly chop shirmp. In a large bowl, combine shirmp. Mayonnaise, celery, dill, orange juice, remaining ½ teaspoon salt, and pepper.
  • Top gilled buns with shrimp salad, and serve.
