Grilled Lamb Chops with Minted Couscous Garbanzo Beans Recipe

Ingredients: Makes 4
1 (8 rib) lamb rib roast, trimmed (about 1 ½ pounds)
¼ cup olive oil
½ teaspoon coarse sea salt,
½ teaspoon ground black pepper
1 ( 10 ounce) box roasted garlic and olive oil couscous
1 ¼ cups chicken broth
2 tablespoons chopped fresh mint
1 ( 16 ounce) can garbanzo beans, rinsed and drained
Garnish: fresh mint leaves

  • Spray grill rack with nonstick nonflammable cooking spray. Preheat grill to medium high heat (350 degree to 400 degree). Cut lamb rib roast evenly into 8 lamb chops. Brush chops evenly with olive oil; sprinkle both sides with salt and pepper. Grill, covered with grill lid, for 2 to 3 minutes on each side, or until desired degree of doneness. Let stand for 10 minutes.
  • Prepared couscous according to package directions, substituting 1 ¼ cups chicken broth for water. Stir in mint and garbanzo beans. Divide evenly among plates, and top each with 2 lamb chops. Garnish with mint leaves if desired.
