Asian Chicken Salad Recipe

Ingredients: Makes 4 to 6
1 ( 5 ounce) package fresh spring mix lettuces
2 cups shredded rotisserie chicken
1 (15 ounce) can mandarin orange segments in light syrup, drained
1 cup choped red bell pepper
½ cup halved snow peas
½ cup thinly sliced carrot Asian Vinaigrette(recipe follows)
½ cup chow mein noodles
1/3 cup sliced green onion

In a large bowl, toss together lettuces, next 5 ingredients, and Asian Vinaigrette. Sprinkle with chow mein noodles and green onion. Serve immediately.

Ingredients: Asian Vinaigrette makes 1 ¼
½ cup rice vinegar
½ cup toasted sesame oil
¼ cup soy sauce
1 teaspoon garlic chile sauce
½ teaspoon sugar

In a medium bowl, whisk together all ingredients. Cover and refrigerate up to 5 days.
