Rellenong Manok or Stuffed Chicken Recipe by: Philippine Cuisine
Ingredients: serve 6
  • 1.2 kg whole chicken
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 can Vienna sausage
  • 2 spanish sausage(chorizo)
  • 2 onion
  • ½ cup canned pimento
  • ¼ cup stuffed olives
  • 1 wedge edam or parmesan cheese
  • 4 eggs
  • 500g ground pork
  • 3 tbsp raisins
  • 2 tbsp butter, melted
Preparation:
  • Debone chicken
  • Wash the season the chicken with salt and pepper inside the cavity and out. Set aside.
  • Chop the Vienna sausage.
  • Chop the Spanish sausage.
  • Peel and chop the onions.
  • Finely chop the pimento pieces.
  • Slice the stuffed olives in half.
  • Grate the edam or parmesan cheese.
  • Lightly beat 1 egg. Hard boil the other 3 eggs. Peel and set aside.
  • Preheat oven to 180C or 350F
  • In a mixing bowl, combine the ground pork, Vienna sausage, Spanish sausage, onions, pimiento, olives, raisins, grated cheese, and the beaten egg. Mix until well combined. Pan fry 1 tbsp of the mixture to check seasoning. Correct seasoning if needed.
  • Stuff the mixture inside the chicken and arrange the hardboiled eggs in the center by pushing the mixture along the sides of the cavity.
  • Do not stuff to tightly or the chicken will burst during cooking. Place chicken will burst during cooking. Place chicken on a baking dish or pan.
  • Brush the butter over the chicken.

  • Bake the chicken for at least 1 hour, or until chicken is cooked through and the skin is golden brown. End.
