How to Cook Guinataang Kalabasa at Sitaw or Squash and Yard Long Beans in Coconut Milk Recipe Philippine Cuisine
Ingredients: serve 6
200g whole shrimps (suwahe)
4 cloves garlic
1 onion
2 tomatoes
300g squash (kalabasa)
300g yard long beans(sitaw)
2 cups fresh coconut milk
½ cup fresh coconut cream
2 tbsp cooking oil
2 tbsp fish sauce(patis)
1 tsp ground white pepper

Procedures:
Peel and devein the shrimps. Set aside the heads and sheel trimmings to make shrimp stock to add flavor.

Crush, peel, and mince garlic.

Peel and chop the onion

Chop the tomatoes

Peel the squash. Cut into 1.5cm or 1 ¼ pieces

If using fresh coconuts, extract the milk

COOKING:
Heat a pot and pour in oil

Sauté garlic, onion, and tomatoes over medium heat.

Add the shrimp stock and squash and simmer for five minutes

Add the coconut milk and let simmer for approximately 5 minutes. Add the beans and continue cooking for another 5 minutes or until the vegetables are tender but still firm to the bite.

Add the shrimps and give the mixture a quick toss.

Season with fish sauce and pepper correct seasoning.

Add the coconut cream. Simmer for one minutes.

Simmer another minutes to cook the shrimps serve.
