175g /6 chocolate digestive biscuits
40g 1 / 1/2 oz unsalted butter
300g/ 10 oz chocolate, broken into pieces
200g/ 7 oz cream cheese
250g / 8oz quark
150ml / 1/4 pint double cream
75g / 3 oz icing sugar

Procedures:

Line the side of greased 20 cm / 8 inch springform cake tin with greaseproof paper. Put the biscuits in a polyethene bag and crush them using a rolling pin. Melt the butter in a saucepan ad stir in the crushed biscuits until they are combined. Press the mixture into the base of the prepared tin.

Melt 275g/ 9 oz of the chocolate. Beat the cream cheese with the quark to soften. Beat in the chocolate, cream and icing sugar until evenly combined. Turn the mixture into the tin and smooth the surface. Chill for at least 3 hours until set.

To decorate, melt the remaining chocolate and put in in piping bag fitted with a fine nozzle. Remove the cheese cake from the tin and transfer to a plate. Scribble lines of chocolate over the top. End.
