Raw Broccoli Brilliance Recipe Source: Cook Vegan
Ingredients: Serve 6
FOR THE DRESSING
80ml ( 1/3 cup ) filtered water
80ml ( 1/3 cup ) extra virgin olive oil
80ml ( 1/3 cup ) fresh lemon juice
140g ( 1 cup ) raw unsalted cashews soaked
30g ( ¼ cup ) cauliflower florets, chopped
2 ½ tbsp apple cider vinegar
2 tbsp coconut sugar
1 ½ tsp prepred yellow mustard
1 tsp salt
¼ tsp chilli flakes
FOR THE SALAD
450g ( 2 ½ cups) broccoli florets, finely chopped
260g ( 2 ½ cups ) celery, finely diced
80g ( ¾ cups ) spring onion ( white and green parts), fnely chopped
160g ( 1 1/8 cup) raw almonds, sliced
60g ( 1/3 cup) shelled hemp seeds
70g ( ½ cup ) raw sunflower seeds
70g ( ½ cup) raw pumpkin seeds
Salt and freshly ground black
Pepper
Optional boosters:
320g ( 2 cups ) shelled raw edamame
70g ( ½ cup ) raw sprouted
Watermelon seeds
80g ( ½ cup ) sultanas
Procedures:
To make the dressing, throw all of the ingredients into your blender and blast on high for about 1 minute until smooth and creamy. Chill in the fridge.
To assemble the salad, in a large bowl, toss the broccoli, celery, spring onions, almonds, helm seeds, sunflower seeds and pumpkin seeds, along with the edamame, watermelon seeds and sultana boosters.
Add the dressing and toss. Season to taste with salt and pepper.
