How to Make Tarragon Potato Casserole

Ingredients: Makes 10 to 12 servings
1 (5 pound) bag Yukon gold potatoes, peeled and cut into 1 inch pieces
1 (8 ounce) package extra sharp white Cheddar cheese, shredded
1 (8 ounce) package cream cheese, softened
1 cup sour cream
¾ cup buttermilk
¼ cup butter
2 tablespoons minced fresh chives
1 tablespoon minced fresh tarragon
1 ½ teaspoon salt
How to Make Tarragon Potato Casserole

Procedures:
  • Preheat oven to 350 degree. Spray a 3 quart baking dish with nonstick cooking spray.
  • In a large Dutch oven, combine potatoes and water to cover. Bring to a boil over medium high heat; reduce heat and simmer for 10 minutes or until potatoes are tender. Drain well, and return potatoes to pot.
  • Add cheddar and remaining 7 ingredients to potatoes. Using a potato masher, mash potatoes to desired consistency. Spoon mixture into prepared baking dish.
  • Bake for 30 to 40 minutes or until golden brown. End.
