How to Make Gazpacho

Gazpacho Recipe
Ingredients: Yield 6 cups
6 cups Red Brandywine tomatoes, seeded, cored, and roughly chopped
2 cus tomato vegetable juice cocktail, such as V8, divided
3 tablespoons red wine vinegar
2 teaspoons creole seasoning
1 cup finely diced cucumber
1 cup finely diced orange bell pepper
1 cup finely diced celery
Garnish: french fried onions

Procedures:
  • In a blender, combine tomatoes and 1 cup tomato vegetable juice. Pulse until pureed. Add remaining cup tomato vegetable juice, vinegar, and creole seasoning. Pulse to combine. Chill, if desired. Divide among 6 serving bowls. Top evenly with cucumber, bell pepper, and celery. Garnish with french fried onions, if desired.
