How to Make Matamis na Bao

Matamis na Bao Recipe
Ingredients: Make 2 pints(appetizers)
5 regular size coconuts, grated
3 ½ cups water, divided
1 big panocha
1 cup glucose (invert sugar)

Procudures:
  • Mash with clean hands the grated coconut meat to prepare it for milk extraction. For the first extraction, do not add water. Squeeze the grated coconuts to extract the milk. Strain the extracted milk through a sieve with very fine mesh. Set aside the strained milk.
  • For second extraction, add 2 cups of the water to the same grated coconuts. Squeeze out milk and strain the milk into a bowl. Set aside strained milk.
  • For third extraction, add remaining 1 ½ cups of the water to the same grated coconuts. Squeeze out milk from grated coconuts and strain the milk into a bowl. Measure quantity of coconut milk from all 3 extractions to make 5 cups.
  • Cup up the panocha into cubes so that melting will be easy.
  • Combine the 5 cups coconut milk, panocha and glucose in a casserole. Cook over medium heat. Stir at regular intervals and simmer until thick. Cool and transfer to sterilized bottles. Serve as spread for pan de sal or crackers. End.
