Pineapple Black Bean Salsa Recipe
1 (15 ounce) can o sodium or low sodium black beans, rinsed and drained
1 ½ cups finely diced fresh pineapple
1 avocado, peeled and diced
1 cup halved grape tomatoes or quartered cherry tomatoes
½ jalapeno pepper, seeds removed and finely diced
¼ cup defosted frozen corn kernels
½ cup sliced green oions(about 2)
½ cup roughly chopped fresh cilantro leaves
2 talbespoons fresh lime juice (about 2 small limes)
¼ teaspoon salt

  • In medium bowl, combine all ingredients, use immediately or refrigerate until ready to serve.
