Blackberry and Goat Cheese Ball Recipe

Ingredients: Makes 12 serving / Appetizer
¼ cup frozen blackberries
2 teaspoons sugar
4 (4 ounce) goat cheese logs, divided
2 teaspoons fresh thyme, divided
1 cup chopped toasted pecans
Assorted crackers

Procedures:
  • In a small microwaveable bowl, combine blackberries and sugar. Microwave on HIGH for 2 minutes. In 30 second intervals, stirring and mashing fruit between each, until berries are soft and sugar dissolves. Into a medium bowl, press berry mixture through a fine mesh strainer using the back of a spoon to squeeze out liquid. Discard pulp and seeds. Let cool to room temperature.
  • Add 2 cheese logs to cooled berry liquid and beat at medium speed with a mixer until smooth. Stir in 1 teaspoon thyme. Cover and chill for 2 hours or until firm. Shape into a ball.
  • Stir reamining 1 teaspoon thyme into remaining cheese. Press mixture around berry mixture to fom a ball. Roll in pecans. Cover and chill for 1 hour or until ready to serve. Serve with assorted crackers. End.
