How to Make Beef Pares

Beef Pares Recipe
Ingredients: Servings 6
1 kilo beef kalitiran (brisket) or shine
Water for boiling (about 3 liters)
6 cloves garlic, divided
1 medium onion, quartered
Salt and pepper to taste
1 cup soy sauce
½ cup brown sugar, packed
2 – 3 pieces star anise(sanque)
1 teaspoon chopped ginger
Salt
1 teaspoon coarse ground black pepper
2 tablespoons cooking oil
6 cup rice

Toppings:
1 egg, screambled and shredded
1 tablespoon chopped green onions
2 tablespoons toasted garlic

Procedures:
  • Put beef in a large pot. Add enough water to cover (about 3 litrs), 3 cloves of the garlic and onion. Bring to a boil then reduce heat to simmer, covering pot, until tender, 1 to 2 hours. Make sure it does not dry (add more water if necessary).
  • When beef is tender, add soy sauce, brown sugar, anise and ginger. Season to taste with salt and pepper.
  • Remove beef from pot, slice into serving pieces and return to the pot and heat through. Keep beef warm in the covered pot.
  • Chop remaining garlic. In a large skillet heat oil and saute the garlic.
  • Stir in rice and mix well. Arrange rice on a serving paltter. Top with egg, green onions and toasted garlic. Serve rice and beef together(whith or whitout the broth). End.
