Making **homemade oyster sauce** allows you to control the ingredients, thickness, and level of seasoning. Depending on your recipe, you can use fresh oysters, oyster cooking liquid, and simple seasonings to create a rich sauce for everyday cooking. Cornstarch can help achieve a smooth, thick consistency, while a little sugar balances the savory flavor. For a vegetarian alternative, mushrooms can provide a similar earthy, umami taste without using oysters. Homemade oyster sauce pairs wonderfully with stir-fried vegetables, beef, chicken, seafood, and noodles. Store your finished sauce safely in the refrigerator and follow appropriate food-safety guidance for homemade sauces. With its versatile flavor and easy uses, oyster sauce is an essential ingredient to explore in your kitchen.
Oyster Sauce Recipe by Filipino Vegan
Ingredients:1 cup dried shiitake mushrooms
2 cups hot water (to reconstitute the shiitake)
2 tablespoons cooking oil
4 cloves garlic, peeled and minced
1 cup oyster mushrooms
4 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon brown sugar
6 tablespoons strong brewed coffee
1 tablespoon potato starch
Salt and pepper to taste
Equipment: food processor or high-speed blender
Instruction:
In a bowl, reconstitute the dried shiitake mushrooms in hot water for about 5 minutes. Reserve the broth.
Heat a medium pan over medium heat. Put oil and once hot, mix in the garlic, shiitake mushrooms, oyster mushrooms, an drew pinches of salt. Cook for 5 minutes or until all flavors blend well.
Meanwhile, in a bowl, combine the shiitake broth, soy sauce, vinegar, brown sugar, coffee, and potato starch. Whisk to fully dissolve the potato starch.
Pour the liquid mixture into the pan and cook over low heat, stirring constantly for a 5 minutes or until the sauce becomes thick. Season with salt and pepper.
Transfer the mixture to a high speed blender and blend until smooth. Alternatively, if you don’t have a high speed blender, you can blend using a food processor and pour the mixture through a strainer or sieve to filter the solids out.
Let it cool down to room temperature and pour the mixture into a container. You can store your oyster sauce in the fridge for up to 2 weeks.
