Ingredients: serve 4
500g / 1lb. chuck steak, cut into bite sized pices
3 tablespoons plain / all purpose flour
3 tablespoons butter
2 onions, chopped
2 tablespoon olive oil
250ml/ 1 cup beer
500ml /2 cups beef stock
2 tablespoons Worcestershire sauce
1 tablespoon light soy sauce
350g pack ready made short crust pastry 12-oz. package ready-made pie crust dough, thawed if frozen
1 egg yolk, beaten with 1 tablespoon water a ceramic pie dish.

Procedures:
Put the beef in a colander, sprinkle with the flour and use your hands to toss the pieces until they are coated in flour – let any excess four fall through the colander.

Heat the butter in a large, heavy based saucepan set over medium/high heat. Add the onions and cook for 5 minutes, until golden. Remove from the pan and set aside.

Add the beer, stock and sauces to the pan and bring to the boil. Return the beef to the pan, cook briefly, then reduce the heat to low. Cover and cook for 1 hour, stirring occasionally. Add the onions and increase the heat to high. Boil for about 15-20 minutes, until the gravy is thick and dark. Let cool completely.

Preheat the oven to 200C (400F) gas 6 and put a baking sheet on the center shelf of the oven.

Lightly flour a work surface. Roll the pastry out to a thickness of about 5mm / ¼ inch. Use a sharp knife to cut a circle slightly larger than the top of the pie dish. Re-roll the remaining pastry and use a knife to cut long strips about 1 ½ cm ½ inch wide. Brush some of the egg wash around the rim of the pie dish and press the pastry strips around the edge. Brush the pastry with egg wash and put the pastry lid on top. Use a fork to press down around the edge to seal and brush all over the remaining egg wash. Bake in the preheated oven for about 45 – 50 minutes, until the pastry is golden and crisp. End.
