How to Cook Afritada Easily at Home

Chicken Afritada (Filipino Tomato-Based Stew)
Ingredients:
- 1 kg chicken (cut into serving pieces) – you can also use pork
- 3 tbsp cooking oil
- 1 medium onion (chopped)
- 4 cloves garlic (minced)
- 2 medium potatoes (peeled & cubed)
- 2 medium carrots (sliced)
- 1 small red bell pepper (sliced)
- 1 small green bell pepper (sliced)
- 1 cup tomato sauce
- 2 tbsp tomato paste (optional, for richer flavor)
- 2 cups chicken broth or water
- 2 tbsp fish sauce (or to taste)
- 1 tsp sugar (optional, to balance acidity)
- Salt & ground black pepper (to taste)
- 1 bay leaf (optional)
- Green peas (optional, about ½ cup)
- Heat oil in a pan. Sauté garlic and onion until fragrant and softened.
- Add the chicken pieces, season with fish sauce, and cook until lightly browned.
- Pour in the tomato sauce and chicken broth. Add bay leaf. Let it simmer for about 20 minutes.
- Add potatoes and carrots. Cook until half-tender.
- Stir in tomato paste (if using) and sugar to balance the taste.
- Add bell peppers and green peas. Simmer for another 5–7 minutes until vegetables are tender but not mushy.
- Season with salt and pepper to taste.
