Adobo Tofu Recipe by Filipino Vegan
Ingredients:
- ½ kilo firm tofu, frozen overnight then thawed for a few hours
- 3-4 tablespoons cornstarch
- 4 cloves of garlic, peeled, crushed, and minced
- Cooking oil
Braising Liquid:
- ¼ cup soy sauce
- 3 tablespoon vinegar
- 1 ½ tablespoons brown sugar
- ½ cup water
- ¼ tablespoons cornstarch
- 2-3 pieces bay leaves
- 1 teaspoon black pepper
- Pinch of salt
Tips: Freeze and thaw the tofu twice to mimic the texture of chicken adobo.
Instruction:
- In a bowl, mix all the ingredients for the braising liquid; soy sauce, vinegar, brown sugar, water, cornstarch, bay leaves, pepper, and salt.
- Press out excess water from the tofu, then cut into one inch square or triangles.
- Using a separate bowl, coat the tofu with cornstarch.
- Heat a medium pan over medium heat and fill with enough oil to coverthe base of the pan.
- Once the oil is hot, fry the tofu until golden on all side.
- Lower the heat and add the garlic. Cook until the garlic is slightly golden .
- Pour the liquid into the pan, and mix well. Cook until the sauce gets thicker. Adjust seasoning to taste.
- Turn off the heat and serve hot with rice. end
