Ingredients: serve 4
2 (8 oz) sirloin steaks, trimmed
1 tsp unsalted cajun seasoning
½ tsp kosher salt, divided
2 cups chopped green tomatoes ( about 3 medium)
1 cup canned white hominy, drained
½ cup chopped red onion
½ cup chopped green bell pepper
2 tbsp torn fresh basil
1 tbsp fresh lime juice
1 tbsp extra virgin olive oil
1 tbsp honey

Heat a large nonstick skillet over medium high. Sprinkle steaks evenly with cajun seasoning and ¼ teaspoon salt. Add steaks to pan; cook 5 minutes on each side for medium rare or until desired degree of doneness. Place steaks on a cutting board; let stand 5 minutes. Cut across the grain into thin sliced.

Combine remaining ¼ teaspoon salt, tomatoes, and remaining ingredients in a bow; toss well to combine. Spoon tomatoe mixture over steak. End.
