How to Make Macaroni Cheese with Broccoli

2 small onions, finely chopped
2 cloves of garlic, finely chopped
½ head of broccoli, cut into florets
½ head of cauliflower, cut into florets
300g(3 cups ) macaroni pasta
1 x 400g tin (2 cups ) coconut milk
50g (1/2 cup walnuts
300ml (1 ¼ cup ) soya milk
1 tbsp dijon mustard
1 tsp cayenne pepper
1 tsp paprika
5 tbsp nutritional yeast
Salt and pepper

Bring a pan of salted water to boil, add the pasta, and cook to the packet instructions or until pasta is al dente.

Meanwhile, in a separate saucepan, saute the onion, garlic, brocolli na dcauliflower ove a low heat stirring often.

Blitz the walnuts with the soya milk smooth, then add the pan containing the onion mixture.

Drain the pasta and set aside. Add the mustard and caayenne pepper to the saucepan, then stir in the pasta. Add the cream from the top of the coconut milk, nutritional yeast, and seasoning, and cook over a low heat until thick and creamy. Serve with a sprinklng of paprika. End.
