How to Make Sweet Smoky Barbecued Tofu

Sweet and Smoky Barbecued Tofu Recipe

Ingredients: Serve 6
BARBECUE SAUCE:
¾ cup ketchup
¼ cup molasses
1 table spoon hot sauce
¾ teaspoon hot sauce
¼ teaspoon liquid smoke
Salt and pepper

TOFU:
28 ounces firm tofu, cut lengthwise into 1 inch thick slabs
2 cup wood chips, soaked in water for 15 minutes and drained
2 tablespoons vegetable oil
Salt and pepper
2 scallions, sliced thin

Procedures:
FOR THE BARBECUE SAUCE: whisk all ingredients together in bowl. Season with salt and pepper to taste, and set aside.

FOR THE TOFU: Spread tofu on several layers of paper towels and let sit for 20 minutes to drain slightly. Using large piece of heavy duty aluminum foil, wrap soaked chips into foil packet and cut several vent holes in top.

FOR A CHARCOAL GRILL: Open bottom vent halfway. Light large chimney starter filled with charcoal briquettes (6 quarts)when top coals are partially covered with ash, pour two thirds evenly over grill, and then pour remaining coals over half of grill. Place wood chip packet on smaller coal pile. Set cooking grate in place, cover, and open lid vent halfway. Heat grill until hot and wood chips are smoking, about 5 minutes.

FOR A GAS GRILL: Place wood chip packet over primary burner. Turn all burners to high, cover, and heat grill until hot and wood chips are smoking, about 15 minutes. Turn all burners to medium low.

Clean and oil cooking grate. Pat tofu dry with paper towels, brush with oil, and season with salt and pepper. Gently place tofu on grill (on cooler side if using charcoal(, cover and cook until lightly charred, 8 to 10 minutes, gently flipping tofu with 2 spatulas halfway through cooking.

Slide tofu to hotter part of grill if charcoal, or turn all burners to high if using gas. Brush tofu with sauce and cook until well browned on both sides, 2 to 4 minutes, flipping and brushing tofu with more sauce halfway through cooking.

Transfer tofu to platter and brush with remaining sauce. Sprinkle with sliced scallions and serve. End.
