Coconut Rice Recipe
Ingredients: Makes 6 servings
3 cups uncooked instant rice
3 cups chicken broth
1 cup sweetened flaked coconut
½ cup choped fresh or jarred mango
1/3 cup chopped green onion
¼ cup choped fesh cilantro
¼ teaspoon salt
¼ teaspoon ground black pepper
Procedures:
In a large microwave safe bowl, stir together rice and broth. Cover and microwave on high for 10 minutes. Let stand for 30 minutes. Cover and chill at least 1 hour.
Stir in coconut, mango, green onion, cilantro, salt, and pepper just before serving. End.
