How to Make Suman

Suman Recipe
Ingredients: 8 to 10 servings(appetizers)
1 kilo malagkit(sticky) rice
2 regular size coconuts, grated
1 1/3 cups white sugar
1 teaspoon salt
Banana leaves cut to 5 inch squares
Water for steaming

  • Wash malagkit rice and drain. Soak in enough wate to cover the rice for 1 hour. Drain. Set aside.
  • Mash grated coconuts with clean hands to prepare for extraction of coconut milk. Do not add water. Squeeze grated coconuts and strain milk through a fine meshed sieve. Set aside. For second extraction, add 3 cups of water to grated coconuts. Squeeze and strain. Measure 4 cups of coconut milk.
  • In a deep pan, boil coconut milk. Add coconut milk to malagkit rice. Mix well. Bring fire to low heat and cover. Stir at regular interval for even cooking. When liquid has been absorbed by the malagkit rice add sugar and the salt. Mix thoroughly. Continue to cook, covered, until shiny.
  • Soften banana leaves by heating over fire. Wipe each square with a clean cloth.
  • Spoon about 2 tablespoons of the malagkit mixture into each banana leaf. Shape the malagkit mixture into cylinders. Roll the banana leaves to completely wrap the malagkit mixture.
  • Tie the wrapped leaves with strips of banana leaves.
  • Pour water into a large pot and put steamer over pot(the steamer should fit snugly into the pot). Arrange teh wrapped suman in the steamer. Bring water to a boil then lower heat to medium. Steam for 30 minutes.
  • Remove suman from pot and let cool slightly. Serve with sugar and hot chocolate or with sweet ripe mangoes. End.
