How to Make Fresh Mango Chutney

Fresh Mango Chutney Recipe
Ingredients: 4 to 6 serving (Dishes)
½ kilo of under ripe but firm mangoes (green mangoes turning yellow)
1 long green chili (siling pang sinigan), slit lengthwise, seeded and sliced thinly crosswise
2 red finger chilies (labuyo), sliced crosswise
3 tablespoons fresh coriader leaves, chopped
1 teaspoon fine salt
½ teaspoon sugar

Procedures:
  • Wash the mangoes very well and pat dry with paper towels.
  • Without removing the skin, separate the mango flesh from the seed.
  • Cut the mango flesh very thinly crosswise.
  • Put the sliced mangoes in a bowl. Add the chili peppers, coriader leaves, salt and sugar. Mix gently but thoroughly. Chill in the refrigerator for about 2 hours so that mangoes can absorb seasonings. Store in an air tight container. This can keep for about 4 days in the refrigerator. Perfect for curry meals. End.
