Egg Wrapper for Lumpiang Ubod
Ingredients: Makes 14 6 inch pieces or 12 8 inch pieces recipe by: Cynthia P. Monzon
½ cup all purpose flour
½ cornstarch
¼ teaspoon salt
1 egg
1 cup water
1 teaspoon oil for brushing

In a medium size bowl, combine flour cornstarch and salt. Make a well in the center and add egg and water. Whisk until smooth.

Lumpian Ubod Filling Ingredients:
2 teaspoons cooking oil
2 cloves garlic, crushed
1 small onion, chopped
1 cup carrots, in match like strips
1 cup Baguio beans, cut into diagonal strips
½ kilo ubod, in match like strips
½ kio chicken breast, boiled and diced(set aside the broth used for the brown sauce recipe follows)
2 teaspoons salt
1 tablespoon sugar

  • Heat oil in a skillet and brown the garlic. Add onion and saute slowly until soft. Stir in the carrots, beans and ubod. Cook, covered, until vegetables are half done. Add diced chicken, salt and sugar and continue cooking until vegetables are tender. Drain over a bowl. Cool.
  • Wrap mixture in homemade egg wrapper. Serve with brown sauce.
Brown Sauce Ingredients:
  • Cook sugar over low heat. Once caramelized pour in chicken broth. Thicken with flour mixture. Sprinkle with salt.
  • Bring to a boil then simmer until thick. Add minced garlic and serve with the lumpia. End.
