Orange Ricotta Pancakes Recipe by: Paula Deen
Ingredients: makes 4 serving
1 ¾ cups whole milk ricotta cheese
2 large eggs, lightly beaten
1 cup self rising flour
1/3 cup plus 2 tablespoons granulated sugar
1 teaspoon baking powder
1/8 teaspoon salt
Confectioners sugar
Garnish: orange zest

Procedures:
- Preheat griddle to 350 degree (medium heat); spray generously with nonstick cooking spray. In a medium bowl, whisk together orange zest, orange juice, ricotta cheese, and eggs. Add flour, granulated sugar, baking powder, and salt, whisking until combined.
- Drops batter by scant ¼ cupsfuls, at least 3 inches apart, onto preheated griddle. Cook for 3 minutes or until bubbles start to form on surface and edges begin to brown. Flip pancakes, and cook for 3 to 4 minutes longer. Sprinkle with confectioners sugar, and garnish with orange zest, if desired. End.
