Cheesy Scalloped Potatoes Recipe by: Paula Deen
Ingredients: Makes 10 to 12 serving
2 tablespoons butter
1 cup chopped onion
¼ cup all purpose flour
3 ½ cups milk
1 (5.2 ounce) package Boursin cheese
1 ½ teaspoons salt
3 ½ pounds Yukon gold potatoes, cut into 1/8 inch thick slices

  • Preheat oven to 300 degree. Spray a 3 ½ quart baking dish with nonstick cooking spray.
  • In a large skillet, melt butter over medium heat. Add onion, and cook, stirring occasionally, for 5 to 6 minutes or until tender. Add flour, and cook, stirring constantly, for 2 minutes. Slowly add milk, whisking until smooth. Cook, whisking frequently, for 8 to 10 minutes or until thickened and bubbly. Add cheeses and salt, stirring until smooth.
  • Layer one third of potatoes in prepared baking dish. Top with one third of cheese sauce. Repeat layers twice. Cover and bake for 2 ½ hours. Uncover and bake for 30 minutes longer. Let stand for 10 minutes bedore serving. End.
