Traditional Succotash
Ingredients: makes approximately 8 cups
4 slices bacon
2 cups chopped yellow onion
4 cups cooked lima beans
4 cups corn, cut from about 8 ears
2 cups heavy whipping cream
1 teaspoon salt
1 teaspoon ground black pepper

  • In a large skillet, cook bacon over medium high heat until crisp. Drain on paper towels. Reserve 3 tablespoons rendered bacon fat in skillet.
  • Heat bacon fat over medium heat. Add onion and cook, stirring often, until onion is soft, 3 to 4 minutes. Add lima beans and corn to skillet. Pour cream over lima bean misture, and cook, stirring often, until liquid begins to reduce, 15 to 20 minutes.
  • Chop reserved bacon. Add to lima bean mixture. Add salt and pepper, stirring well.
