Ingredients: makes 8
1 (4 ounce) package smoked salmon
1 medium cucumber
1/3 cup chive and onion cream cheese, softened.
1 tablespoon capers
1 avocado, peeled, pitted, and sliced
Procedures:
- Cut salmon into 8 equal strips; set aside.
- Using a vegetable peeler, slice cucumber lengthwise, forming 8 ribbons. Reserve reamining cucumber for another use.
- In a small bowl combine cream cheese and capers.
- Arrange salmon strips on cutting board; top each with a cucumber ribbon. Spread cream cheese mixture evenly on cucumber ribbons. Place 1 avocado slice at one end of each cream cheese layer rool up; press end to seal.
