French for sweet dough, this is a crasp, sweet pastry ideal for fruit tarts or pies,. It is easy to make and freezes well.

Ingredients:
2 sticks plus 5 tablespoons salted butter, chilled and cubed
¾ cup caster / granulated sugar
4 cups plain all purpose flour
1 egg
Make about 1kg / 2 lbs

Procedures:
Put the butter, sugar and flour in a large bowl and rub between your fingertips until the texture resembles fine breadcrumbs. ( you can add orange or lemon zest at the point if desired.) add the egg and work the mixture with your hands to a smooth paste.

Wrap the dough in clingfilm/plastic wrap and refrigerate fro about 30 minutes until film. End.
