Sinangag, or Filipino garlic fried rice, is a simple yet flavorful dish made by stir-frying leftover rice with lots of garlic and a bit of oil. It’s a staple in Filipino breakfasts and is often served alongside fried eggs, tapa (cured beef), longganisa (Filipino sausage), or other savory meats. The key to great Sinangag is using day-old rice, which gives it the perfect texture—slightly dry and easy to fry.

Sinangag or Fried Rice Recipe by Kulinarya
Ingredients: Serve 6
  • 5 cups cooked rice(day old rice is always better)
  • 4 cloves garlic
  • 1 tbsp cooking oil
  • ½ tsp coarse salt

Preparation:
  • Sprinkle a little water over the cold cooked rice.
  • Sprinkle coarse salt and a little water over the rice. With moistened hands, loosen rice, coating the grains with salt.
  • Crush the garlic cloves.
  • Cooking: Heat pan and add oil. Sauté garlic in cooking oil until light brown.
  • Add rice. Using 2 metal turners (wooden if using nonstick pans), mix the rice very well and cook until the rice is lightly toasted.
  • Season with salt. Mix well. Serve immediately, while hot. End.
