Pancit Molo or Dumpling Soup Recipe Philippine Cuisine
Ingredients: serve 6 | 18 dumplings
200g fresh shrimps
1 or 80g onion
200g ground pork
1 egg
½ tsp 3g salt or fish sauce
¼ tsp 1g ground black pepper
18 pcs wanton or molo wrapper
6 cloves 30g garlic
2 sprigs spring onions
2 tbsp 30ml oil
6 cups 1.5liters chicken broth
Salt and pepper to taste

Peel and devein the shrimps. Discard the heads and shell trimmings. Mince the shrimps.

Peel and chop onion finely. Divide into two portions.

In a bowl, mix the ground pork, minced shrimp, and half of the onions. Add the egg and mix thoroughly. Season with salt and pepper.

Take one wonton wrapper. Place 1 tsp 5g of the mixture on the corner of the wrapper nearest you and fold over once. Take the corners on the left and right sides, dab with water and press those ends together. Place finished dumpling on a tray. Repeat the procedure for all the dumplings.

Crush, peel, and mince the garlic.

Chop the spring onions for garnish.

In a preheated pan with half the oil, fry chopped garlic over medium heat until golden brown. Set aside for garnish.

In a preheated pot with 1 tbsp 15ml oil, sauté the mince onions. Add the garlic. Add the chicken broth and simmer over medium heat. Season with salt and pepper.

When ready to serve, bring the broth to a boil. Add the dumplings, reduce heat to simmer for about 2-3 minutes. Serve immediately. End.
