Grilled Lime Chicken

Ingredients: Makes 8 to 10 serving
1 cup mayonnaise
½ cup olive oil
2 teaspoons lime zest
1/3 cup fresh lime juice
¼ cup minced fresh cilantro
4 cloves garlic, minced
2 teaspoons salt
2 teaspoons hot sauce
6 boneless skinless chicken breasts ( about 3 pounds)
1 onion, thinly sliced
Assorted tortilla chips

2 teaspoons hot sauce
6 boneless skinless chicken breasts ( about 3 pounds)
1 onion, thinly sliced
Assorted tortilla chips
Procedures:
- In a reseable plastic bag, combine mayonnaise, olive oil, lime zest, lime juice, cilantro, garlic, salt, and hot sauce. Add chicken and onions. Seal bag, and turn to coat. Refrigerate for at least 4 hours or up to 24 hours.
- Spray a gril lrack with nonstick nonflammable cooking spray. Preheat grill to medium heat (300 degree to 350 degree). Remove chicken from marinade, discarding marinade.
- Grill chicken, covered with grill lid, for 8 to 10 minutes per side or until a thermometer inserted in thickest prtion registers 165 degree. Cool slightly before slicing. Serve with tortilla chips.
