Sweet and Sour Pork Tenderloin Recipe by: Paula Deen
Ingredients: Make 6 serving
1 (1 ½ pound) pork tenderloin
1 teaspoon salt
½ teaspoon grund black pepper
1 cup Peach Seet and Sour sauce diveded(Recipe follows)

Procedures:
  • Spray grill rack with nonstick nonflammable cooking spray. Preheat grill to medium high heat (350 to 400 degree). Sprinkle pork with salt and pepper. Reserve ½ cup sauce to serve with meal brush tenderloin with 2 tablespoons sauce.
  • Grill tenderloin, covered with grill lid, for 10 minutes per side or until a meat thermometer inserted in thickest portion registers 145 degree, brushing occasionally with remaining sauce. Let stand for 10 minutes before slicing. Serve with reserved ½ cup sauce.
Peach Sweet and Sour Sauce
Ingredients: Makes 5 cups
4 cups peeled, pitted, and chopped peaches
1 ¼ cups chopped onion
½ cup ketchup
6 tablespoons apple cider vinegar
¼ cup honey
2 tablespoons tomato paste
3 cloves garlic, minced
2 canned chopotle peppers in adobe sauce, minced
1 ½ teaspoons paprika
1 teaspoon ground cumin
½ teaspoon salt

Procedures:
In a large saucepan, stir together peaches, onion, ketchup, vinegar, honey tomato paste, garlic, chipotle peppers, paprika, cumin and salt. Bring to a boil over medium heat, reduce heat to low, and simmer, stirring occasionally, for about 1 hour. Cool slightly.

In the work bowl of a food processor, process mixture, in 2 batches, until very smooth. End.
