Baked Chicken with Mushrooms
Ingredients: 2 to 4 Serving
4 to 6 pieces chicken thighs or dumstick
Salt and pepper
2 tablespoons cooking oil
½ cup flour
1 tablespoon butter
1 tablespoon olive oil
1 medium onion, chopped
4 to 6 shiitake mushrooms, sliced thinly
1 can mushroom soup
1 cup chicken stock

Procedures:
  • Preheat oven to 350 degree F.
  • Sprinkle both sides of chicken with salt and pepper
  • In a skillet, heat the oil. Dredge the marinated chicken in flour and tap off any excess flour. Brown both sides of chicken in hot oil for about 2 – 3 minutes. Remove from heat and ararnge in an ovenproof dish or casserole.
  • In an saucepan heat the butter and olive oil. Saute the onion until it caramelizes. Blend in mushrooms, mushroom sopu and chicken stock. Mix well.
  • Cook until mixture becomes smooth and creamy. Season with salt and pepper.
  • Pour mixture over chicken and bake in preheated oven for 20 minutes or until done. Add some chicken stock if the sauce bocmes dry. Serve immediately.
  • If using dried mushrooms, soak them in water for about 10 minutes then drainliquid beore slicing them. You may also use porcini or any other wild mushroom. End.
