Peachy Cinnamon Rolls Recipe

Ingredients: Make 2 dozen rolls
2 ( ¼ ounce )packages active dry yeast
3 tablespoons honey
1 cup warm milk (105 to 110 degree)
7 tablespoons butter, softened
1 large egg
1 ½ teaspoon salt
4 ½ cups plus 1/3 cup all purpose flour, divided
2/3 cup firmly packed light brown sugar
½ cup chopped pecans
1 teaspoon ground cinnamon
½ cup peeled, pitted, and finely chopped fresh peaches
2 cups confectioners sugar
5 tablespoons heavy whipping cream
½ teaspoon vanilla extract

Procedures:
  • Stir yeast and honey into warm milk, and let stand for 5 minutes or until foamy.
  • In the bowl of heavy duty stand mixer fitted with a dough hook attachment, place milk mixture, butter, egg, and salt. Beat at low spreed until combined. Gradually add 4 ½ cups flour, and beat at medium low speed for 3 minutes. Place dough in a greased bowl, turning to grease top. Cover and let rise in a warm place (85 degree), free from drafts, for 1 hour or until doubled in size
  • Spray a 13x9 inch baing pan with nonstick cooking spray. In a small bowl, stir together brown sugar, pecans, cinnamon, and remaining 1/3 cup flour.
  • On a lightly floured surface, divide dough in half, and roll each portion into a 17x9 inch rectangel. Sprinkle each rectangle with half of pecan mixture and ¼ cup peaches.
  • Starting at a long side, roll up each dough rectangle, jelly roll fashion, and cut each into 12 rolls. Place rolls, cut sides down, in prepared baking pan. Cover and let rise for 30 minutes.
  • Preheat oven to 350 degree. Uncover rolls, and bake for 30 to 35 minutes or until golden brown.
  • In a large bowl, whisk together confectioners sugar, cream, and vanilla. Spread glaze evenly over rolls, and serve warm. End
