Chirstmas Sugar Cookies Recipe

Ingredients: Makes about 3 ½ dozen
1 cup butter, softened
1 ½ cups sugar
1 table spoon vanilla extract
2 large eggs
3 cups all purpose flour
2 teaspoons baking powder
¼ teaspoon salt

Meringue frosting (recipe follows)
Garnish: sugar sprinkles, non pareils

Procedures:
  • In a large bowl, beat butter, sugar, and vanilla at medium speed with a mixer until fluff. Add eggs, one at time, beating well after each addition.
  • In a medium bowl, combne flour, baking powder, and salt. Gradually add to butter mixture, beating until combined. Wrap dough in plastic wrap, and refrigerate for at least 1 hour or up to 3 days.
  • Preheat oven to 350F line baking sheets with parchment paper.
  • On a heavily floured surface, roll dough to ¼ inch thickness. Using desired cutters. Cut out dough. (Dough scraps can be rerolled up to 3 times) place on prepared baking sheets.
  • Bake for 9 to 11 minutes or until edges are golden brown. Let cool on pans for 2 minutes. Remove from pans, and cool completely on wire racks.
  • Spoon piped meringue frosting into a piping bag fitted with a small round tip. Outline desired shapes on cookies. Let stand for at least 2 hour or until frosting is dry.
  • Using the bakc of a spoon or a small clean paintbrush, paint cookies with Meringue frosting as desired. Let stand fro at least 2 hours or until frosting is dry. Store cookies in airtight containers up to 1 week.
Piped Meringue Frosting
Ingredients: Makes about 2 cups
¼ cup cold water
3 tablespoons meringue powder
2 cups confectioners sugar

Procedures:
  • In a medium bowl, beat ¼ cup water and meringue powder at medium speed with a mixer until soft peaks form. Gradually beat in sugar until smooth. (frosting will be thick)
Meringue Frosting
Ingredients: Makes 1 ½ cups
¼ cup cold water
3 tablespoons meringue powder
2 cups confectioners sugar
Food coloring paste (assourted colors)

Procedures:
  • In a small bowl, whisk ¼ cup cold water and meringue powder until foamy. Gradually add sugar, whisking until smooth. Divide into small bowls, and tint with food coloring, stirring to achieve desired colors.
